Alfalfa sprouts are grown from the tiny dried beans of the Alfalfa plant. The beans are soaked in water and allowed to sprout over several days. Atop the stems are two petite leaves that range in various colors of yellow, brown and light to dark-green depending on light exposure. Alfalfa sprouts have a crunchy, crisp texture with a sweet nutty flavor.
